Fallowfields, the flagship restaurant at Housel Bay hotel on the Lizard Peninsula in Cornwall, has announced the launch of its latest tasting menu.
The new menu, titled “Dawn of Warmth,” celebrates the abundance of springtime produce, with dishes that showcase the freshest ingredients from the region.
Commenting on the launch, Head Chef Joseph Fallowfield said: “As late spring evolves into early summer the larder throughout Cornwall becomes abundant with an array of seasonal gems which just seem to cry out to be eaten together.
“This period of the UK food calendar is a stark contrast to the six weeks previous, making it a really exciting time to launch a new menu.
“This menu focuses on what we, inside the kitchen, believe to be the truest representation of Cornwall’s late spring bounty.”
The “Dawn of Warmth” tasting menu features a variety of dishes that highlight the flavours of spring, including:
For the first time, the menu is also available as a short version, which features a selection of highlights from the full menu.
The tasting menu-only format at Fallowfields was first introduced at the start of the year and was driven by the opportunity to create a more sustainable kitchen supply chain that reduces food waste and allows the kitchen team to get creative with a brand-new seasonally-inspired menu every six weeks.
Both long and short tasting menus are available to order with paired wines by the glass. This allows guests to enjoy a more flexible dining experience, pairing each course with the perfect wine.
The full tasting menu is £65 per person or £110 with paired wines. The short tasting menu is £45 per person or £70 with paired wines.
A more casual à la carte menu offering is available at the hotel’s other restaurant, The Terrace.
